Sorry - at this time I dont. Although, I've had a request or two for fisheating creek area so if that is where you are talking about I'll move it up the list....
In fact, now that you mention it, I may be able to map out the whole western part of the lake from Moore Haven up to Okeechobee and WEST from there.
OK.... now that I see I've mis-understood your question LOL.... I thought you were headed to the west of lake Okeechobee.
I'm leaving that reply there because I think it's an idea I'm going to persue.
For YOUR trip - Yes, I have from the canal that leads out of West Lake Toho (into Lk Cypress) down to the locks @ hwy 60. But the map stops just short of the locks. It's my standard map of the main AIRBOAT part of the Kissimmee Chain and Gardiners Marsh.
After that, I got nothing else on the Kissimmee River. But I'd like to make up that map.
I recently finished a map of that has a huge section of the middle of the state... From Lake Arbuckle south to Lake Istokpoga and west over to Wauchula and Bartow. Problem is with a map that covers a large area is that it is so zoomed back that even with a magnifying glass you can't see much more than the main channel - no trails like on my other maps.
When are you going to do the trip?

We are planning two trips one from West lake Toho to River Ranch in March and the next one is to Okeechobee will be in April.
We were thinking the first trip if we run we could do it in 3 to 4 hours but we will play along the way.
