gator tail

I cooked some up a few weeks ago. Simple but very good. Cut it into 2"-3" pieces, slow heat in a big pan with cut up yellow onion and green bell pepper. While that's cooking.... (here's the cheating part) Cook up a box of Zatarans jambalaya rice mix. Mix the two together when they are both done and let them simmer togther in a larger pot to collect flavors and you are done.
 
I like to soak in Honey BBQ sauce and a little water ring out a little then bread and fry p-nut oil I prefer
 
we cube our gator first we don't keep any red meat we soak in milk and egg and then flour salt and pepper it and deep fry hot and fast in bite size chunks for not more then 11/2-2 min. golden brown if you over cook it it ain't fit to eat.
 
cube the white meat , soak it in milk and egg salt and pepper and bread it in aunt jamima pancake batter and deep fry, good stuff
 
REMOVE ALL FAT
cut in 1 inch cubes roll in cajun seasoning or everglades season
cut bacon strips in half and wrap around gator cube and place on Keebob
sticks and grill
also can add other stuff to Keebob(onions, peppers, shrimp,frogleggs)
froglegs also wrapped in bacon mmmmmmmmmmmmmmmmmm :lol:
 
batter or corm meal it's all good. I like them all.

This is what my wife and kids like best:
Cut the meat up small nothing real thick, !/2 inch thick is just about right,
Clean it up good and dry it real good.

Crush up some saltene cracker by hand , not to a powder but coarse and rough.
Dip gator in milk and egg wash, just a little milk with the eggs.

salt and pepper to your taste, I like the pepper heavy!

Pan fry it till it's golden brown.

Kick it up a notch with a little hot sauce if you like.

You can use peanut oil or cresco, it don't matter, Just back off on the heat and cook it a little longer.

If you want it to taste the best, pan fry it in butter.

it is ummmmmmmm ummmmmm good. Just don't forget to take your Lipitor before you go to bed. :)

Try this on some bluegils or specks, you won't be sorry.
 
soak in orange juice, it will tenderize the meat and take out any game to it. Then you can do anything with it, gator fritters, fried gator, gator with rice, etc..... It's all good.
