Gauge and switch preference

Working on a new 0360 build. Engine will be lycoming sv Narrow deck 180 freshened up with p10 cylinders with 10:1 pistons, going on a 12x7 custom aluminum hull with poly, probably gonna go Dom powder coated rigging. Gonna order new guages and switches for it and wanted to see what everyone’s preference is on what type of switches they like and guages for this set up before i order some. I was looking at new Murphy switch guages for volt/amp, oil pressure, and oil temp. Switches will power up Nav lights bilge pump sprayer pump running lights and a radio, wasn’t sure if i should run a fuse block or just get a whole switch panel
 
I'm rebuilding my 180 now, went with VDO gauges and Cole Hersee(5582-10-BX) PVC coated switches, push button start is Cole Hersee(9245-BP). Run the switches on a switch panel. Most of the time, at the shop I help out at, we use this setup on aircraft boats, haven't had an issue.
 
Are you looking at the switch type murphy gauge? Murphy makes quality stuff for sure, but there are times I don't want my motor shutting off because of a safety switch.

I didn’t intend on having it set up to shut down the engine. Maybe set it up to an alarm if that’s possible
