Typically with a new flat tappet hydraulic, you go to 2500 rpm for 25 minutes. On a solid lift flat tappet, you leave out the inner springs or use a 1.3 ratio rocker and go 2500 rpm for 25 minutes. Then go with regular rockers or add the springs back. On a roller, I suppose you would do similar of 2500 for at least, enough time to get some heat on the engine and set timing, then go riding. You don't want to matt WOT as soon as you take off, but keep in mind that several cycles up and down through the rpm range are needed to properly seat rings. You'll want to be able to get it up to RPM as soon as you are comfortable with it as the rings need to be seated at the rpm it will be used at. That's why little old ladies' cars use oil and smoke like hell when you bring the rpms up excessively, as they were broken in at low rpm and are not seated at higher ones.
