Off Subject, Sorry. Need Info About Doing A Will

I was hoping there might be someone with some expertise or experience with my kind of problem. My mom ( 80 y.o. ) just got all of her important papers to me. There are 2 wills, I think they were done by an attorney. Anyway she has scribbled on them and changed things on these wills. My question is this, can I get a blank will form from an office supply place and fill it out like she wants, and her sign it with a Notary, would it over ride the old ones? Would I have to file it somewhere? Also, if say she left her home to me and it wasn't paid for, would the will have to go to probate? I have an open signed and notorized Quick Claim Deed in a safety deposit box from her that I have had for several years, thinking that if and when something happened to her I could avoid probate by filling in the blanks on the deed and filing it, will that work? I can do that, I didn't even think about it. Thanx. I have gotten some input from some of the great folks on this forum by way of P-M and I appreciate ya'lls time and efforts. Its nice to be able to ask others for an unbias input to a problem. Thanx again everyone for your time, Cajun
