step hulls question

Could someone explain to me why use a step hull? I thought it was just for racing but heard some things about them lately and seeing a LOT of them for sale maybe I don't understand them as well as I thought. Also someone said to me the other day they are not good for running dry. Thanks for the help.

Best riding hull out there on the water and by far the funnest to drive! However can't run the hill with them and if you run poly you ruined what makes them special!
