Water temp too low?

My 455 buick will not get her temp above 150 degrees. Is this a problem or should I just be fine with it? I thought about blocking off some of the radiator but then I talked myself out of it because I am thinking that cooler has to be better than hotter. Right or wrong?
 
90% of all gasoline water cooled engines operate more efficient around a water temp of 180F. However I always try to keep my operating temp around 150 to 160 this will allow you to run your boat very hard without the water temp running away. I have found if you set your boat to run at 180 and you decide to run it hard for a long period of time the temp will climb to over 200 and eventually beyond what your cooling system is capable of handling. However if you run at 150 to 160 you will never overheat your motor unless something mechanical fails. My opinion is 150 is perfect you may lose a few horsepower but your motor will never overheat even when running black mud in August.
 
My 302 Ford runs around 150 at night frogin. Then when I run it hard or even just normal ridin it may get up to 160. But what is normal ridin. :p
 
I have always been told that gas car motors burn fuel better if it runs around 180.I'm not an engine biulder,but thats what they have told me.
