All you low country boil guys

If you could shine some light on things
Like
(Low country boil)
1 portions/ people fed ( how many?)
2 cooking time and sides served
3 ratio of seafood,meat, vegetables
4 and any input is welcomed please

I figure 1/2lb sausage, 1lb shrimp, 2 ears corn cut in thirds per person. I find the women folk and little ones rarely eat more than that, so plenty for the larger appetites and possibly lunch the next day.

2 cooking time and sides served
I use ½ & ½ regular and hot sausage seared on the grill then cut on the diagonal 2.5-3” pieces (Most folks just add it to the pot to cook). I will create the stock the night before
( Crab boil bag and Old Bay with cayenne pepper to taste) heat on stove top and drop the halved small red taters in bring to a boil turn heat off then let them sit in the stock over night as to soak in the seasonings.
Next day bring stock back to temp add corn, large chunked celery, large onions halved and quartered, fresh garlic to taste and sausage, once the corn is done add the shrimp until turn a light pink. Keep in mind if left in pot the shrimp will continue to cook.
Some crusty French bread and garlic butter.
If available fresh crawfish is a nice addition.

Spread newspaper over table and get down to business.

I find the best side is a cooler full of beer of choice.

INGREDIENTS
1 (3-ounce) package extra-spicy boil-in-bag shrimp-and-crab boil (Old Bay)
1 (12-ounce) bottle pale ale beer
2 lemons, cut in half
3 pounds baby red potatoes
2 pounds mild or hot smoked sausage, cut into 2-inch pieces
6 ears fresh corn, cut in half
2 pounds unpeeled, medium-size raw shrimp
2 pounds fresh crawfish

DIRECTIONS
1.
Combine first 3 ingredients and 5 quarts water in a 12-quart. covered stockpot. Bring to a rolling boil over medium heat. Add potatoes and sausage; cover and cook 10 minutes. Add corn; cover and cook 5 minutes.

Serves 10 to 12 with side dishes , and the girls always have plenty of sides. Stone crab season we have a pot of claws as well.

2.
Add shrimp and crawfish; cover and cook 2 minutes. Remove from heat. Let stand, covered, 10 minutes. Drain.

The family has several a year , birthdays , holidays or just family get togethers .

Thanks guys, good stuff going to try it
Out so far seafood, crawfish,baby clams
Stone crab and shrimp Cajun sausage
Corn baby taters pearl onions,celery
Garlic and for some reason jasmine rice
As a side w/ beer. !?
