I got a 13'6'' Cotton mouth and my boat is 6' wide at the bottom which would leave 6" on each side unprotected.... Not sure if I am safe with that

I like mine to the edge with a beveled cut. I have seen boats as you describe but have no first hand experience with it.

My boat is like that. That is the way it was when I bought it and I am forever fixin cracks where there is no poly. a piece that will go to the edge is what I would recommend. hopefully when I find a 8x13 piece I'll change mine. Boat is out of use now because of a crack

I have had my boat for 5 years now and when I bought it it only had slick bottom and I am over it... Worked fine when I was running the glades but up now I live in melbourne and just burn thru it too quick... I have it all stripped down now and fixing some cracks and going to go back with steel flex this time to get me through hunting season but after the first of the year I'll either be looking for another hull or rehabing mine and putting some plastic on

Diamondback has 10x5 and 6x12 but the cost between the two is pretty big. Does anyone know where I can find a 6x10 sheet?

Call and talk to GTO in Ocala. Seems to me like they were the ones that had 80x160 sheets when I was looking around a couple years ago. I would not want to run it without it being the full width of the bottom, either.
