OK, so we had a disscussion around the camp this weekend on cooking swamp cabbage.
I like mine with some fat-back, salt, and cracked black pepper and that's it.
How do ya'll cook it ?
I heard it was illegal to cut it now ?

Never heard of it being illegal to cut a swamp cabbage.

I had an ole cracker show me how to do it so this isn't my original recipe.

Cut yer cabbage, you already know how to do this part, open it up and take off several of the top layers, blah blah blah. Once all cut up, put it in a pot with clean water and salt and bring it to a boil for maybe 10 minutes. now poar off this water and add fresh clean water in the pot and a bit of salt, salt pork or hot sausage. He even did it with deer liver once and it was awesome.

Cracked black pepper is good, you can also add a bit of basil or oregano for that Itallian flavor. I just like black pepper and garlic. My favorite is the hot smoked sausage as well. Boil til its tender.

Now about the sausage. I slice it into poker chips and fry it til it gets brown than put it in the pot with the cabbage.

Also a dash of cayenne or even chilli powder will enhance the flavors. Not much of either just a dash or two. You can also use some Curry very sparingly.

I also add chopped onions, bell peppers, and I have also added peeled & chopped apples which dissappear in the cooking.

Serve with hot biscuits or hoecake, pan bread, or cornbread. Look out !

thats about the best way ,, and yes i heard it was illegal but not sure to what extent.

Boil it with salt, (bacon or whatever if you want ) drain, add a little milk, a little butter, and pepper to taste.

go to lakeport for the orange fest,taste the way some of them oletimers cook it. Just don't eat too much or you'll get an internal cleansing :mrgreen:

I still havent got an answer about legal or illegal cabbage cuttin, but consider this.

Around here I see them bulldoze them down by the dozens everytime they clear a new lot for housing or a store, church or mall. I also see the county coming on call and clearing a 10-20 foot swath between houses and dried growth on uninhabited lots next to homeowners. I guess the fees are paid by someone to someone for cutting cabbage palms.........NOT.

I got several right around my house and now that this thread has come up, at least ONE is in danger of extinction. Well at this point its just threatened but the closer to the weekend and Saturday cookout the more endangered it becomes.

I like lemon pepper and everglades cook down about ten minutes soft not mushy...While on the subject anyone build a good cabbage axe on here..

I've had it all kinds of ways. Scotty's recipe is pretty common for me. Next time if you a mind to, add two small spoons of brown sugar, and cut up a bunch of mullet gizzards (small chunks) Make sure you clean em real good.....then add your sausage, lots of pepper, little salt to taste....Salt pork, bacon, and onions......Make sure you clean them gizzards......I'm pretty fond of a mullet gizzard, if you've never tried one, your missing out on a fine lilttle chunk of meat.

I cut mine up then put it in the pan I fried the fatback in , add a LITTLE water some salt and pepper and put a lid on it and simmer it down.

It can't be illeagal for two reasons ... one I still see it being sold along the roadside and two we bulldozed several thousand last year

cant be near pines .... and ones on ditches are better..?? I dont know if it makes a difference but that is just how i have always done it cause it was the way i was taught!! :D

I think yer fine on private property but on state land you could get in trouble ?? I know it does say in most wma regulations you cant cut down or drive metal objects into trees??

Cant cut down trees leaves swamp cabbage in the clear then. Palms are NOT trees they are grass. Thats factual.

I was told that cabbage cut from a burned area will be bitter and ya cant get the bitter out. Never tried to see though. I have never cut a bad one, but that time could be coming. All the ones in my neighborhood are amongst pines and they eat just fine. Now this "could" come from the burned area thing. I see a lot of pine areas that the palms and paines have been burned. I never cut from a burn like I said so I ain't sure bout this.

I am sure a good cabbage is good eatin.

I've heard it's Illegal also......But, I've never seen the swamp cabbage police in Labelle at the festival asking to see a receipt where folks bought their cabbage from.......... :wink: :wink: :wink:

cook it down like Whitebear said and Put some softshell turtle in there. Now thats Good,
I ve also had it on the grill stuffed with steak and fixins like a wrap.

Well as long as your not cuttin them at the
courthouse square. or in the parking lot
at a hotel. it's not against the law.
don't forget to put about 3 peeled taters
in it. leave them alone while stirring.
they will draw all the bitter out.
DON'T eat them. or when you pull your britches
down before you can squat. it will look like
where a truck has spun mud all over the
bushes behind ya.

Of course you have to have the landowners permission
before you take anything, including cabbage trees.
I've eat it many ways, and most were good, but
Mama used to pickle it with a sweet pickle resipe
and I remember she would put grape leaves in the
bottem of the canning jar ( she said it made them
crispier)They sure were good.
If the south would'a won we'da had it made!

Illegal to cut cabbage?!?!?! I'd like to see them find a way to get me to stop what's the world coming to they might as well change Floridas name to newyork or some crap we need more true floridians in goverment postions
