Easy Country Cake

2 C all purpose flour
1 C sugar
7 eggs, separated
2 t baking powder
pinch of salt
1 T Vanilla, Almond, Rum or favorite extract

No oil or butter.

Mix flour, baking powder, salt.

Directions:
Whip egg whites to peaks, set yolks aside.
Add sugar slowly while beating, after whites are peaked.
Add egg yolks, 1 at a time, while beating.
Add extract.
Fold in flour mixture in 1/3rds. Do not whip.

9" x 11" baking pan, buttered & parchment paper on bottom.
Bake @ 375* for 20-25 min.

You can get it drunk with a simple syrup:
2 C water
2 C sugar
1 cinnamon stick
1 piece of lime peel, use potato peeler.
( for Rum cake…add Rum)
Boil for a couple minutes, let cool.
Pour over cake while in the pan.
Cover, cool in fridge.
