Alabama Caviar

This is another one from my Grandmother.She made it every year to be eaten on New Years day for good luck.
3 cans black-eyed peas
1 lg. green bell pepper chopped
1 sm. jar chopped pimiento
6-8 green onions chopped
2 cloves garlic minced
3/4 bottle Italian dressing

Heat peas and skim off stuff that floats to top.Drain and rinse with cold in large bowl and add the rest of ingredients.Cool in refrigerator till cool.If it's to dry add more salad dressing as needed.
I punch it up some jalapeno peppers and what ever leftovers I got on hand {ham shrimp,bacon bits}.
Make one or two days before and eat on New Years day.
To have good luck for the year you have to eat at least 365 beans.
