I chose not to hotrod the 4.3 vortec that my boat came with mostly because I didn't upgrade the whole fuel and intake system to take advantage of a cam upgrade. The local UPS mechanic built his boat with a 4.3 V6 based on his experience with the engine. For a fishing boat in my local area a roughly 200 hp setup will get you around 80% of the time with a ~14" boat. They are not a bad engine, but there are some roadblocks to overcome to make high performance.

I run the 4.3 in my buggy, less weight and more importantly weight off the front axle. I got plenty of gear and the goal is mostly idle all day, no need to feed 2 more cylinders. When needed, the 4.3 makes plenty power for the application.

I used to be a straight 6 guy with a worn out Chevy 250. Then my (then) 16 year old son hit a cabbage palm with the 4.3 GMC half ton. "You all Right? How's the Engine?".

At first glance it seems simple, 350 less 2 cylinders. When you get into it there are several key differences that make them harder to support vs. the V8. I got 3 other buddies running the same, plus the 350 crowd, as long as someone has the part that just broke we are good.
